Raspberry Walnut Vegan Smoothie

Blend your way to the perfect dairy-free breakfast or post-workout snack! Welcome Peter Aggen!

We are excited to announce that Peter Aggen has joined our team! Peter graduated from Duke University with a Doctorate in Physical Therapy in 2005 and completed a residency in sports medicine at Gundersen Lutheran in 2008. His main interests in therapy are in running analysis, lower extremity injuries and spine care. Peter is the lead Physical Therapist at our St. Paul clinic and is welcoming new patients. Welcome Kris Balgaard!

We are excited to announce that Kris Balgaard has joined our team! Kris earned his Bachelor Degree in Kinesiology (2000) and Doctorate of Physical Therapy (2003) from the University of Minnesota. He has practiced physical therapy in an outpatient setting for 9+ years and has focused his efforts on becoming skilled in manual therapy treatment of the spine and extremities. Kris utilized the knowledge gained through these efforts to successfully pass his board examination and became an Orthopedic Certified Specialist in 2007. Strawberry, Banana & Flaxseed Smoothie

Adding flaxseed to your diet is a great way to increase your intake of omega-3s, which are associated with a lowered risk of heart disease, cancer and depression. Ingredients
  • 1/2 medium banana
  • 1/2 cup frozen unsweetened strawberries
  • 1 1/2 cups skim milk or light soy milk
  • 2 tablespoons ground flaxseed
Make It: Blend all until smooth.

Penne Alla Vodka

  • 8 ounces whole wheat penne
  • 2 cups Marinara Sauce
  • Pinch of crushed red pepper
  • 1 container (7 ounces) 2 percent Greek yogurt
  • 1 cup chopped fresh basil
  • Salt and freshly ground black pepper
  • 6 Tbsp. grated parmesan cheese
Directions Bring a large pot of lightly salted water to a boil. Add the pasta and cook according to the package directions, drain. While the pasta is cooking, bring the marinara sauce and crushed red pepper to a simmer in a large nonstick sautĚŠ pan over medium heat. Cook the sauce, stirring it occasionally with a heat-until it 's slightly thickened, about 5 minutes. Remove the sautĚŠ pan from the heat. Stir about 1/2 cup of the marinara sauce into the yogurt until smooth (this tempers it and prevents the yogurt from curdling). Then whisk the yogurt mixture back into the marinara sauce. In a large serving bowl, toss the sauce with the drained penne and the basil. Season with salt and pepper to taste. Sprinkle the cheese on top, and serve. Original Source

Pumpkin Pie Dip

  • 15 oz can pumpkin
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 1/8 tsp cinnamon
  • 1/8 tsp pumpkin pie spice
  • 6 oz Greek yogurt
  • 8 oz Cool Whip
  • Cut up apples to dip
Mix pumpkin with brown sugar, vanilla and spices, blend well. Mix in yogurt. Fold in cool whip and chill in refrigerator until ready to eat. Makes about 6 cups (12 servings) Original Source
