Pumpkin Perfection

It's a shame pumpkins are only popular for two months out of the year, because there are several nutritious and delicious ways to eat these festive gourds! Pumpkins contain tons of vitamins and minerals (including Vitamin A and potassium) with very few calories Ò only 30-40 calories per one cup serving. They are also one of the best sources of beta-carotene, which is a powerful antioxidant that is converted to vitamin A in the body to reduce risk of cancer, asthma, and heart disease.
