Avocado Lime Ice Cream

Chock-full of the healthy fats that keep you satisfied, avocados have been linked to lower body weight and higher ? 'good cholesterol numbers. Avocado Lime Ice Cream (Photo source: Coastal Kitchen) No need for an ice cream machine to make this delicious treat! Ingredients: (Serves 6)
  • 2 ripe avocados
  • 3 juiced limes
  • _ cup of full-fat coconut milk (canned version found in the cooking aisle)
  • _ cup of sweetened condensed milk
Directions:
  1. Combine all above ingredients in a blender or food processor and blend until the mixture is smooth.
  2. Using a rubber spatula pour the mixture into a shallow glass pan and cover.
  3. Place in freezer for at least four hours before serving.
